1 1/2 cups brown rice

12 ounces eggplants , cut in 1/2-inch cubes

1 green bell pepper ( small , cut in 1/2-inch squares )
1 red bell pepper ( small , cut into � inch squares )
1 medium tomatoes , peeled , seeded and cut into large pieces or can tomatoes , drained and cut into large pieces
4 teaspoons ground cumin
1/2 teaspoon turmeric
1/4 teaspoon ground ginger
1/4 teaspoon ground cinnamon
1/2 teaspoon fresh ground pepper
1/4 cup cilantro , chopped ( can substitute parsley )
3 cups water

Instructions

1.Start by thoroughly washing the rice in cold water. Leave to soak for 30 minutes.

3.Add in the bell peppers and cook for another 5 minutes.

5.Add the water and bring to a boil, then reduce the heat to a low simmer and cover the pot with a tight-fitting lid.
6.Cook for 35-40 minutes until the rice is tender and most of the liquid has been absorbed.
