Ingredients

2 1/4 cups unbleached all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon white pepper

1/4 teaspoon ground ginger
1 cup sugar
3 large eggs
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
1/4 teaspoon orange extract
2 tablespoons minced orange zest
3/4 cup whole almond , with skins , toasted , cooled and chopped coarse
Biscotti are a twice-baked Italian cookie that originated in the city of Prato. They are made by baking a log of dough and then cutting the baked log into slices that are baked again to make them crispy. Spiced almond biscotti are a popular variation on this classic cookie, with the addition of cinnamon, ginger, cloves, and orange zest to bring extra flavor and aroma. These biscotti are perfect for dipping into your morning coffee or as an anytime snack.

Instructions

1.Preheat oven to 350°F. Line a baking sheet with parchment paper.
2.In a medium bowl, whisk together flour, baking powder, baking soda, salt, white pepper, cloves, cinnamon, and ginger until well combined.
3.In a large bowl, beat sugar and eggs until light and fluffy. Add vanilla extract, almond extract, orange extract, and orange zest and mix until well combined.
4.Add the flour mixture to the egg mixture and stir until just combined. Fold in chopped almonds.
5.Divide the dough in half, handling with floured hands. Transfer each half onto the parchment-lined baking sheet and form into two logs, each about 12-inches long and 1-1/2-inches wide. Make sure there is plenty of space between the logs.
6.Bake for 25-30 minutes, until the logs are lightly golden brown and firm to the touch. Remove from oven and let cool for 10-15 minutes.
7.Using a serrated knife, cut the logs into 1/2-inch slices. Lay the slices flat, spacing them about 1/2-inch apart on the baking sheet.
8.Bake for another 10-15 minutes, flipping halfway through baking, until the biscotti is crispy and golden brown. Remove from oven and cool on a wire rack.
