Instructions

1.In a stockpot, combine chicken broth, garlic, cumin, basil, cilantro, taco seasoning, diced tomatoes and green chilies, and diced tomatoes with lime and cilantro.
2.Add sliced zucchini, diced onion, and drained and rinsed black beans. Bring to a boil, then reduce heat and let simmer for 20 minutes.
3.Add shredded chicken breasts and let the soup simmer for another 10 minutes.
4.To serve, ladle the soup over steamed white rice and top with shredded Monterey jack cheese, crushed corn tortilla chips, sliced avocado, and additional cilantro if desired.
