Ingredients

10 lbs goose , with the liver reserved , goose neck , gizzard and heart
4 -5 tablespoons oil
3 -4 medium potatoes
1 medium onion , finely chopped
4 ounces lean salt pork

1 teaspoon finely chopped sage
4 onions , sliced
1/3 cup milk
1/2 cup water
1 turnip , sliced
2 tablespoons butter

Instructions

12.Cover the pan with foil and bake for 3 hours, basting the goose with the pan juices every 30 minutes.
13.Uncover the pan, raise the oven temperature to 375°F, and bake for an additional 30-40 minutes, or until the goose skin is crispy and golden brown.
14.Meanwhile, place the cooking apples, water, sugar, and butter in a medium saucepan over medium-high heat.
15.Bring to a boil, reduce the heat to low, and simmer for 15-20 minutes, or until the apples are soft and tender.
16.Season with nutmeg and salt to taste.
17.Remove the goose from the oven and let stand for 10 to 15 minutes before carving.
18.Serve with the apple sauce on the side.
