1 lb beef , for stock
4 carrots
3 parsnips
2 onions
1 tablespoon salt
2 quarts water
2 medium potatoes
3 ounces bacon
7 ounces lentils , dried
4 allspice berries
4 black peppercorns
2 bay leaves
Braggs liquid aminos , to taste
1 bunch parsley , for garnish
4 frankfurters

Instructions

1.Preheat your oven to 350°F (180°C).
2.Peel and chop the onion, carrots, parsnips, and potatoes into small cubes.
3.Cut the bacon into small pieces.
4.In a large saucepan, boil 2 quarts of water with the beef, vegetables, salt, bay leaves, allspice berries, and black peppercorns, and let simmer for approximately 1 hour.
5.Remove the beef and vegetables from the pot and strain the broth into a separate pot. Return the beef to the pot, and discard the vegetables and spices.
6.In a separate pot, cook the lentils in salted water for 30-40 minutes, until fully cooked and tender.
7.Add the lentils and bacon to the pot with the beef broth and let simmer for an additional 10-15 minutes.
8.Season with Braggs liquid aminos to taste.
9.Cut the frankfurters into small pieces and add to the pot, allowing to cook for an additional 2-3 minutes.
10.Serve hot, garnished with fresh parsley.
