Ingredients

1 large eggplant
1 tablespoon olive oil
2 tablespoons mint leaves , chopped
200 g low-fat ricotta cheese
4 eggs
6 baby roma tomatoes , halved ( can use cherry tomatoes or tomato wedges )
2 small long cucumbers , halved lengthways , Lebanese cucumbers are perfect
1/2 cup mixed olive
1 tablespoon za'atar spice mix or 1 tablespoon sumac
100 g reduced-fat feta cheese , crumbled
2 tablespoons honey
extra virgin olive oil , for presentation to drizzle
extra mint leaf ( to garnish )

Instructions

1.Preheat oven to 200C/400F.
2.Cut the eggplant into bite-sized cubes. Drizzle with olive oil and toss to coat. Roast for 20-25 minutes until tender and browned.
3.In a mixing bowl, combine the chopped mint leaves with the ricotta cheese.
4.In a non-stick frying pan, fry the 4 eggs until cooked as desired.
5.Arrange the roasted eggplant, halved baby roma tomatoes, halved long cucumbers, and mixed olives on a large serving plate.
6.Sprinkle with za'atar spice mix or sumac.
7.Spoon the ricotta mixture onto the plate and sprinkle with the crumbled feta cheese.
8.Drizzle honey over the mezze plate and a little extra virgin olive oil to finish.
9.Top with fresh mint leaves for garnish.
