Ingredients

1 & frac 14 cups dried navy beans
6 cups water
1 cup onion , chopped
1 cup celery
1 cup carrot , sliced
3 garlic cloves , minced
1 tablespoon vegetable oil
2 teaspoons ground cumin
& frac 14 teaspoon salt
1/8 teaspoon cayenne pepper
1 can vegetable broth or ( 14 1/2 ounce ) can reduced-sodium chicken broth
2 cups water
1 orange
1 cup salsa verde
light sour cream , to taste ( optional )
fresh cilantro , to taste
Mexican White Bean Soup is a warm and comforting vegetarian soup that is hearty and satisfying. Instructions

1.Rinse the beans and soak them in water overnight.
2.In a large pot, heat oil over medium heat and sauté onions, carrots, celery, and garlic until soft.
3.Add cumin, salt, and cayenne pepper and stir to combine.
4.Add the beans, vegetable/chicken broth, and 2 cups of water.
5.Bring to a boil, reduce heat, and simmer for 2-3 hours, or until the beans are soft.
6.Remove from heat and let cool.
7.Puree the soup with an immersion blender or transfer to a blender in batches and blend until smooth.
8.Return the soup to the pot and heat over medium heat until hot.
9.Cut the orange into wedges and serve with a dollop of salsa verde and fresh cilantro.
