Ingredients

1 large red onion , cut into 3/4 inch chunks
2 1/2 teaspoons olive oil
2 tablespoons balsamic vinegar
14 firm roma tomatoes , cut in half lengthwise

3 cans canned cannellini ( white beans )
2 tablespoons fresh thyme , chopped ( fresh is best ) or 2 teaspoons dried thyme ( fresh is best )
2 tablespoons fresh basil , chopped or 2 teaspoons dried basil
pepper
This Mexican White Bean & Roasted Tomato Salad is a delicious and healthy way to enjoy fresh vegetables and legumes. Instructions

1.Preheat the oven to 425°F (220°C).
2.In a large bowl, toss the red onion with 1 teaspoon of the olive oil and 1 tablespoon of the balsamic vinegar. Spread the onion on a baking sheet and roast until tender and brown around the edges, about 20 minutes.
3.Toss the tomatoes with the remaining 1 1/2 teaspoons of olive oil and a pinch of salt. Spread the tomatoes on a separate baking sheet and roast until they begin to collapse, about 15-20 minutes.
4.In a large serving bowl, combine the white beans, thyme, and basil. Add the roasted onions and tomatoes to the bowl and toss gently.
5.Drizzle the remaining tablespoon of balsamic vinegar over the top and season with salt and pepper to taste. Serve warm or chilled.
