Ingredients

2 tablespoons vegetable oil
1 onion , diced
6 garlic cloves , minced
1 cup rice
4 bell peppers , I use a combo of green bell & poblano
1 lb cooked ground beef
1 can black beans , rinsed & drained
1 can diced tomatoes
2 tablespoons oregano
1 tablespoon salt
1 teaspoon ground cumin
ground black pepper
jalapeno pepper , minced , to taste ( optional )
2 2 cups monterey jack pepper cheese ( or a combination ) or 2 cups cheddar cheese ( or a combination )

Instructions

1.Preheat the oven to 375°F.
2.In a large skillet over medium-high heat, add the vegetable oil and onion. Cook the onion until it becomes translucent. Add garlic and cook for 1-2 minutes.
3.Add rice and stir until coated with oil and onion/garlic mixture.
4.Stir in ground beef, black beans, diced tomatoes, oregano, salt, and ground cumin. Season with black pepper and jalapeno pepper (if using).
5.Mix well and cook until heated through.
6.Cut the tops off of the bell peppers and remove the seeds and stems. Place the bell peppers in a baking dish and fill with the meat and rice mixture.
7.Top the bell peppers with cheese.
8.Bake for 25-30 minutes, or until the cheese is melted and bubbly. Serve hot.
