Ingredients

6 -8 flour tortillas
1 can of drained pinto beans or ( 14 ounce ) can black beans
1/3 cup sliced black olives
1 small chopped white onions or 1 small yellow onion
16 ounces grated Mexican blend cheese or 16 ounces cheddar cheese
1 can enchilada sauce
1 1/2 lbs ground beef
1 can Wolf brand chili , with or without beans
1 taco seasoning mix , packet
1 can tomato sauce

Instructions

1.Preheat oven to 375 degrees F (190 degrees C).
2.In a skillet, brown ground beef and onion over medium heat until no longer pink. Drain off any excess fat.
3.Add taco seasoning mix, tomato sauce, and Wolf brand chili (with or without beans) to the skillet, and stir to combine.
4.In a separate bowl, mix together the drained pinto beans or black beans, black olives, and a third of the grated cheese.
5.Spread 1/2 cup of enchilada sauce in the bottom of a 9x13 inch baking dish.
6.Place 2-3 tortillas on top of the sauce to cover as much of the bottom as possible.
7.Add a layer of the beef and chili mixture, then a layer of the bean and cheese mixture.
8.Repeat layers, starting with the enchilada sauce and ending with a layer of cheese.
9.Bake in the preheated oven for 30 minutes or until heated through and cheese is melted and bubbly.
