Mexican Tamarind Cooler (Agua de Tamarindo) is a popular and refreshing drink in Mexico, often enjoyed during hot summer days or as a refreshing accompaniment to a spicy meal. The tamarind, which is a pod-like fruit native to Africa but grown in various parts of the world, gives this drink a unique sweet and sour flavor. This drink is sometimes flavored with additional ingredients like cinnamon or vanilla. The Mexican Tamarind Cooler is a great thirst-quencher and is often preferred over soda or other sugary drinks in Mexico.

Instructions

1.In a large pot, add the tamarind pulp and 2 cups of water. Bring to a boil and reduce heat to simmer for about 10 minutes or until the pulp is softened.
2.Remove from heat and let cool to room temperature. Using your fingers or a spoon, remove any seeds or fibers from the tamarind pulp.
3.Pour the tamarind pulp into a blender and add 1 1/2 cups of sugar and 1/2 liter of water. Blend until smooth.
4.Strain the tamarind mixture through a fine mesh sieve into a pitcher. Add another liter of plain water and stir to combine.
