Mexican Tacos Carnitas are a traditional Mexican dish consisting of slow-cooked pork served on corn tortillas with various toppings. This recipe calls for pork tenderloin, which is a leaner cut of meat that is healthier than other cuts like pork shoulder. The pork is slow-cooked in a crock-pot with orange juice, chicken broth, and a blend of spices, resulting in tender and flavorful carnitas that can be shredded and used to fill tacos. This dish is perfect for a family dinner or a fiesta with friends.

Instructions

1.Mix together ancho chili pepper, ground coriander, minced garlic, fresh oregano, finely shredded orange peel, and ground black pepper in a small bowl.
2.Rub the spice mixture all over the pork tenderloin and place it in the crock-pot.
3.Add the onion wedges, chicken broth, orange juice, and honey to the crock-pot. Cover and cook on low heat for 6-8 hours, until the pork is tender and can be shredded with a fork.
4.Remove the pork tenderloin from the crock-pot and shred it with a fork. Return the shredded pork to the crock-pot and mix it with the juices and onions.
5.Warm the corn tortillas in the oven or on the stovetop. Serve the carnitas on the warm tortillas with chopped cilantro, green onion, green chili salsa, and optional wedges of lime.
