Ingredients

2 tablespoons vegetable oil
1 1/2 - 2 lbs crookneck yellow squash or 1 1/2-2 lbs pattypan squash , chopped into 2 inch chunks
1 onion , chopped
3 garlic cloves , minced
1 jalapeno , chopped ( optional )
1 can diced tomatoes , undrained ( or equivalent of fresh )
1 can corn , undrained ( or equivalent of fresh kernels )
1 teaspoon chili powder
salt and pepper
1 cup shredded cheddar cheese ( may use pepper jack or monterey jack )

Instructions

1.In a frying pan, heat the vegetable oil over medium-high heat.
2.Add the chopped crookneck yellow squash or pattypan squash, chopped onion, minced garlic, and chopped jalapeno (optional).
3.Cook for 5-7 minutes, or until the vegetables are tender.
4.Add in the canned diced tomatoes and canned corn (undrained), along with the chili powder, salt, and pepper.
5.Cook for an additional 5-7 minutes, or until heated through.
6.Sprinkle shredded cheddar cheese (or pepper jack or monterey jack) over the top of the squash mixture and cover the pan with a lid.
7.Allow the cheese to melt, about 2-3 minutes.
8.Serve hot.
