Ingredients

1/2 cup brown rice
1 3/4 cups water ( stock or broth of choice )
1 onion , diced
1 bell pepper , roasted , peeled , and diced ( any color )
5 garlic cloves , minced
1 can of fire roasted diced tomatoes , drained ( liquid is great to measure and add to your cooking water )
1 bay leaf
1/2 teaspoon hot Mexican chili powder
1/2 teaspoon roasted ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon paprika ( I like Spanish smoked , my bf does n't , you decide )
1 tablespoon olive oil
Mexican (Style) Rice is a delicious twist to traditional rice dishes from the Mexican cuisine. Instructions

1.Rinse the brown rice in cold water and set aside.
2.In a medium-sized pot, add the diced onions and olive oil. Cook over medium-high heat for 2 minutes.
3.Add the minced garlic and chopped roasted bell pepper and cook for another 2 minutes.
4.Add the hot Mexican chili powder, roasted ground cumin, ground coriander, paprika, and bay leaf to the pot and cook for 1 minute.
5.Add the drained diced tomatoes, cooking water, or stock/broth to the pot and bring it all to a boil.
6.Add the rice to the pot, stir, and lower the heat to simmer.
7.Cover the pot and cook for 45 minutes, or until all liquid is absorbed and the rice is cooked thoroughly.
8.Remove the pot from the heat, fluff the rice with a fork, and let stand for 5 minutes before serving.
