1 spaghetti squash
1 lb lean ground beef
1 cup purple onion , diced
3 garlic cloves , mined
1 teaspoon coriander
1 package taco seasoning
3/4 cup water
1/2 cup salsa
1 can black beans , drained and rinsed
1 cup frozen sweet corn
1 lime
3/4 cup cilantro , chopped and divided
3/4 cup cheddar cheese , shredded
salt and pepper
1 cup tortilla chips , coarsely crushed
Mexican Spaghetti Squash Casserole is a hearty and delicious dish that is perfect for busy weeknights. Instructions

1.Preheat oven to 375°F.
2.Poke a few holes in the spaghetti squash using a knife or fork.
3.Place the squash on a baking sheet and place in the oven for 45-55 minutes or until it is soft to the touch.
4.Meanwhile, cook the beef, onions, and garlic in a large, deep skillet over medium-high heat until the beef is browned and fully cooked.
5.Drain the fat from the pan.
6.Add coriander, taco seasoning, water, salsa, black beans, and frozen sweet corn and stir well.
7.Reduce heat and simmer for 8-10 minutes, stirring occasionally.
8.Squeeze lime juice over the mixture, stir in 1/2 cup of cilantro, and remove from heat.
9.Cut the spaghetti squash in half lengthwise and scoop out the seeds.
10.With a fork, scrape the inside of the squash out to make spaghetti-like strands.
11.Add the squash to the beef mixture and stir until well combined.
12.Pour the mixture into a casserole dish.
13.Top it with crushed tortilla chips and sprinkle shredded cheese over the top.
14.Bake for 10-15 minutes, or until the cheese is melted and bubbly.
