Ingredients

6 large eggs
2 jalapenos , minced
3 tablespoons mayonnaise
2 tablespoons sour cream
2 tablespoons chives or 2 tablespoons green onions , finely chopped
1/2 teaspoon ground cumin
1 dash lime juice
salt and pepper , to taste
3 tablespoons fresh cilantro , chopped fresh and divided or 3 tablespoons fresh parsley , chopped and divided

Instructions

1.Bring a large pot of water to a boil. Add eggs and cook for 10 minutes.
2.Remove eggs from heat and transfer them to a bowl of ice water to cool down.
3.Once cooled, peel eggs and slice them in half lengthwise.
4.Carefully remove yolks and place them in a separate bowl.
5.To the bowl with yolks, add jalapenos, mayonnaise, sour cream, chives or green onions, ground cumin, lime juice, and half of the cilantro or parsley. Mix well.
6.Season with salt and pepper to taste.
7.Spoon or pipe egg yolk mixture back into the egg white halves.
8.Garnish with remaining cilantro or parsley.
9.Serve immediately or refrigerate until ready to eat.
