Instructions

1.In a large bowl, mix the ground pork, chili powder, ground bell peppers, paprika, black pepper, cinnamon, clove, ginger, nutmeg, coriander seed, oregano, cumin, pressed garlic, and crumbled bay leaves until well combined.
2.Pour in the wine vinegar and brandy into the pork mixture and stir until the liquids are fully incorporated.

4.The next day, soak the cellophane casing in warm water for about 1 hour to soften them.
5.Stuff the cellophane casings with the spiced pork mixture and twist the ends to form links.
6.Heat a large skillet over medium heat and cook the sausage, turning occasionally, for around 10-12 minutes or until they are browned and fully cooked.
