Ingredients

2 medium ripe tomatoes , cored and quartered ( about 12 ounces )
1 medium onion , preferably white , peeled , trimmed of root end , and quartered
3 medium jalapeno chiles , removing the ribs and seeds from 2
2 cups long-grain white rice
1/3 cup canola oil
4 garlic cloves ( med . minced or pressed through a garlic press about 4 teaspoons )
2 cups low sodium chicken broth
1 tablespoon tomato paste
1 1/2 teaspoons salt
1/2 cup fresh cilantro leaves , minced
1 lime , cut into wedges for serving

Instructions

1.In a blender combine the tomatoes, onion, and 1 jalapeno. Puree until smooth.
2.Rinse the rice in a fine-mesh strainer under cold running water until the water runs clear. Drain thoroughly.
3.Heat the oil in a large Dutch oven or heavy-bottomed pot with a tight-fitting lid over medium-high heat until shimmering.
4.Add the rice and cook, stirring frequently, until lightly toasted and translucent, about 6 minutes.
5.Reduce the heat to medium, add the garlic and the remaining jalapeno, and cook, stirring constantly, until fragrant, about 1 minute.
6.Add the tomato puree, chicken broth, tomato paste, and salt. Stir to combine and bring to a boil.
7.Reduce heat to low and cover the pot tightly. Simmer until the liquid is absorbed and the rice is tender, about 18 minutes.
8.Remove the pot from heat and let it stand, covered, for 10 minutes.
9.Fluff the rice with a fork, sprinkle with cilantro, and serve with lime wedges on the side.
