5 large yellow sweet peppers , topped , membranes removed and seeded
1 large red pepper , topped , membranes & seeds removed
2/3 cup jicama , peeled & diced
2 jalapeno peppers , finely chopped
2 tablespoons cilantro , minced
1 1/2 tablespoons vinegar
1 teaspoon honey
1 pinch chili powder ( hot `` or '' not it 's up to you )

Instructions

1.Preheat the oven to 375°F (190°C).
2.Roast the sweet peppers and the red pepper on the oven rack for about 30 minutes until the skin looks blackened.
3.Remove the peppers from the oven and put them in a plastic zipper bag, seal the bag for about 10 minutes.
4.Remove the skin from the peppers and chop them into bite-size.
5.Combine the chopped peppers with minced jicama , jalapeno peppers, cilantro, vinegar, honey, and chili powder.
6.Give everything a good mix then refrigerate for at least 2 hours and enjoy!
