Ingredients

1 cup beer , anything but dark beer
1/2 lb oaxaca cheese , grated or 1/2 lb mozzarella cheese
1 lb asadero cheese or 1 lb muenster cheese , grated
4 ounces green chilies , chopped ( you can find these in a can- for authentic Mexican use poblano's- you can get these canned too )
1/4 lb chorizo sausage ( optional ) or 1/4 lb soy chorizo ( optional )
1/2 cup tomatoes , chopped
4 garlic cloves , minced
salt & freshly ground black pepper
Mexican Queso Fundido or Mexican Fondue is a popular Mexican snack that has been enjoyed for generations. Instructions

1.In a cast-iron skillet, pour beer and cook until it reduces by half over medium-high heat.
2.Add grated oaxaca cheese or mozzarella cheese, and grated asadero cheese or muenster cheese into the skillet followed by chopped green chilies and minced garlic cloves.
3.Cook for about 5 minutes while constantly stirring until the cheese is melted and bubbly.
4.Add optional chorizo or soy chorizo followed by chopped tomatoes.
5.Season with salt and freshly ground black pepper as per taste.
6.Serve hot with tortilla chips or sliced toasted baguette.
