Ingredients

4 large potatoes , scrubbed and unpeeled
1 egg , lightly beaten
1 medium onion , chopped
2 tablespoons lemon juice
1/2 cup fresh coriander , chopped
1 teaspoon morton lite salt
1/4 teaspoon pepper
oil ( for frying )
2 large tomatoes , coarsely chopped
1/2 cup celery , chopped
1 scallion , chopped
1/4 cup parsley , chopped
1 teaspoon morton lite salt
3 tablespoons vinegar
1/4 teaspoon minced garlic
3 -4 drops hot pepper sauce
Although latkes are traditionally made for Hanukkah, these potato latkes have a Mexican twist. The addition of coriander and hot pepper sauce gives them a distinct flavor. Instructions

1.Grate the potatoes and onion in a food processor.
2.In a large bowl, combine the grated potatoes, onion, egg, lemon juice, coriander, salt, and pepper. Mix well.
3.Heat oil in a large frying pan over medium-high heat. Drop the potato mixture by spoonfuls into the oil and fry until golden brown and crisp on both sides. Drain on paper towels.
4.In a medium bowl, combine the tomatoes, celery, scallion, parsley, salt, vinegar, garlic, and hot pepper sauce to make the salsa.
5.Serve the latkes hot with the salsa on top.
