Ingredients

3 lbs ripe guavas
1 1/3 cups sugar
1 cinnamon stick
8 cloves
2 strips lime zest ( green only-2 inches long by 1 inch wide )
2 teaspoons fresh lime juice
1/4 teaspoon vanilla ( if using Mexican Vanilla-1/2 t. for `` regular '' )
Guavas are a tropical fruit that originated in Mexico and are now widely cultivated in many parts of the world. Although used in many savory dishes, guavas are most commonly enjoyed as a dessert. Instructions

1.Rinse guavas and slice off ends.
2.Cut each guava into quarters and remove any seeds.
3.Combine sugar, cinnamon stick, cloves, lime zest and juice, vanilla (if using) with 2 cups water in a 2-quart saucepan. Bring to a boil over high heat, stirring constantly.
4.Add guavas and reduce heat to medium-low. Simmer gently, uncovered, until guavas are tender (about 30 to 45 minutes, depending on ripeness).
5.Remove pan from heat and let cool to room temperature.
