2 jalapeno peppers , seeded and very thinly sliced
1 cup mexican beer
20 tomatillos , peeled and coarsely chopped
2 tablespoons fresh cilantro , finely chopped

1 cup grated manchego cheese

This Mexican pasta dish is an innovative twist on the classic Italian dish, combining fettuccine with a tangy tomatillo sauce and spicy meatballs. Instructions

1.Bring a large pot of salted water to a boil. Add the fettuccine and cook until al dente, 10 to 12 minutes.
2.In a large bowl, mix together the ground pork or chicken, egg, breadcrumbs, cilantro, thyme, scallions, allspice, hot sauce, salt, and black pepper. Form the mixture into small meatballs the size of a cherry tomato.
3.In a large skillet, heat the olive oil over medium heat. Add the garlic and onion and cook until the onion is translucent, about 5 minutes. Add the sliced jalapeno peppers and cook for another minute.
4.Increase the heat to high and add the meatballs to the skillet. Cook, stirring frequently, until the meatballs are browned on all sides, about 5 minutes.
5.Add the mexican beer to the skillet and cook for 2 minutes. Stir in the tomatillos and cilantro and cook until the sauce has thickened slightly, about 5 minutes. Season the sauce with salt and pepper.
6.Drain the fettuccine and toss with the tomatillo sauce. Serve hot with grated manchego cheese and crusty bread on the side.
