Ingredients

1 lb ground turkey
1 jalapeno ( chopped )
1 green pepper ( chopped )
3 tablespoons taco seasoning ( I use Penzey 's Bold Seasoning )
1/2 cup water
1 can refried beans ( I like to use black beans )
12 manicotti
3 cups enchilada sauce
1 1/2 cups monterey jack cheese
Mexican Manicotti (Enchilada Style) is a fusion of Mexican and Italian cuisine. The traditional ricotta cheese filling is swapped out for a flavorful mixture of seasoned ground turkey and refried beans. The combination of enchilada sauce and melted Monterey jack cheese on top of the stuffed manicotti creates a delicious and comforting meal that is sure to please the whole family.

Instructions

1.Preheat oven to 375 degrees Fahrenheit.
2.In a skillet over medium-high heat, cook the ground turkey until browned.
3.Add the chopped jalapeno and green pepper, taco seasoning, and 1/2 cup of water. Continue to cook until the vegetables are soft and the liquid has evaporated.
4.Add the can of refried beans and continue to cook for 2-3 minutes until heated through.
5.Stuff the cooked manicotti with the meat and bean mixture and place into a 9x13 inch baking dish.
6.Pour the enchilada sauce over the stuffed manicotti.
7.Top with Monterey jack cheese.
8.Bake for 25-30 minutes until cheese is melted and bubbly. Let cool for a few minutes before serving.
