1 can enchilada sauce , divided
4 packages flour tortillas , cut in half - divided
2 cans fat-free refried beans
2 packages queso fresco ( Mexican cheese ) , thinly sliced - divided
2 packages shredded reduced-fat Mexican cheese blend , divided
1 jar nopalitos ( sliced cactus ) , drained - divided

Instructions

1.Preheat oven to 375°F. Coat a 9x13-inch baking dish with cooking spray.
2.In a large skillet over medium-high heat, cook ground beef until browned and crumbled. Drain any excess fat.
3.Add taco seasoning mix and ½ cup water to skillet, stirring until well combined.
4.Stir in ½ cup enchilada sauce and remove from heat.
5.Layer a third of the tortilla halves on the bottom of the prepared baking dish.
6.Top with half of the beef mixture, half of the refried beans, half of the queso fresco, half of the shredded Mexican cheese blend and half of the nopalitos.
7.Repeat layers in same manner and top with remaining tortilla halves.
8.Spread remaining enchilada sauce over top of lasagna.
9.Cover with foil and bake for 25 minutes.
10.Uncover and sprinkle remaining cheese over the top of the lasagna. Bake uncovered until cheese is melted and bubbly, about 5 to 10 minutes more.
11.Let cool for a few minutes before slicing and serving.
