1 pound 99 % -lean ground turkey
1 envelope taco seasoning mix
3/4 cup water
12 corn tortillas
1 can chopped green chiles , drained
2 cans enchilada sauce , divided
1 carton nonfat sour cream , divided
1 can nonfat spicy refried beans , divided
1 package shredded low-fat Mexican cheese blend , divided

Instructions

1.Preheat the oven to 375°F (190°C).
2.In a skillet, brown the ground turkey.
3.Stir in the taco seasoning mix and water. Bring to a boil, then reduce heat and simmer for 10 minutes.
4.In a 13x9 inch baking dish, layer 6 corn tortillas, half of the turkey mixture, and half of the green chiles.
5.Pour 1 cup of enchilada sauce over the top, then spread half of the sour cream and half of the refried beans on top.
6.Add another layer of 6 corn tortillas, the remaining turkey mixture, and the remaining green chiles.
7.Pour the second can of enchilada sauce over the top, then spread the remaining sour cream and refried beans on top.
8.Sprinkle the shredded cheese on top.
9.Cover the baking dish with foil and bake for 30 minutes.
10.Remove the foil and bake for an additional 15 minutes.
