Ingredients

4 corn tortillas
2 teaspoons olive oil , divided
1 lb mexican chorizo sausage , casings removed and crumbled
2 medium white potatoes , parboiled and cut into 1/4 inch dice
salt and pepper
1 cup canned refried black beans
1 cup Cotija cheese ( feta cheese can be substituted )
1/2 cup shredded iceberg lettuce
1/2 cup sour cream ( to garnish )
1 teaspoon smoked paprika
Mexican Huaraches are a traditional Mexican dish made from corn tortillas, refried beans, and a variety of toppings. In this recipe, we've added spicy chorizo, crispy potatoes, and a cheesy Cotija cheese topping for a delicious twist on this classic dish. Instructions

1.Heat 1 teaspoon olive oil in a pan over medium heat.
2.Add chorizo and potatoes to the pan. Cook for 10-15 minutes until the potatoes are crispy and the chorizo is fully cooked.
3.Meanwhile, heat refried black beans in a separate pan over low heat, stirring occasionally.
4.In a small bowl, mix together Cotija cheese, shredded lettuce, and smoked paprika.
5.Preheat the oven to 375°F. Brush both sides of the corn tortillas with the remaining olive oil and place them on a baking sheet.
6.Spread the refried black beans over the tortillas, followed by the chorizo and potato mixture.
7.Sprinkle the Cotija cheese mixture over each tortilla and bake for 5-7 minutes or until the cheese is melted.
