1/2 teaspoon coarse salt
1/2 teaspoon coarse black pepper
3/4 teaspoon ground cumin

4 tablespoons melted butter
1 beaten egg
6 slices lean bacon
1/2 lb lean chorizo sausage
1/2 cup diced red bell pepper
1/2 cup thinly sliced green onion ( save tops )
1/4 cup canned diced green chiles
1/2 cup chopped sun-dried tomato
3/4 teaspoon coarse salt
1/4 teaspoon cayenne pepper
1 cup shredded mexican melting cheese
6 eggs
2 cups milk
1 cup sour cream
1/4 cup chopped fresh cilantro leaves

Instructions

1.Preheat oven to 425 & deg; F.
2.In a large bowl, combine shredded hash browns, salt, black pepper, cumin, garlic powder, melted butter, and beaten egg. Mix well.
3.Press the hash brown mixture firmly onto the bottom and up the sides of a 10-inch quiche pan.
4.Bake the crust for 25-30 minutes or until it turns golden brown.
5.In a large skillet, cook the bacon until crispy, then remove and drain on paper towels. Add chorizo sausage to the skillet and cook until browned. Add the red bell pepper, green onion, diced green chiles, sun-dried tomato, salt, and cayenne pepper. Cook until vegetables are tender. Remove from heat.
6.Sprinkle shredded cheese into the prepared crust and top with the chorizo mixture. Arrange cooked bacon slices on top.
7.In a large mixing bowl, whisk together eggs, milk, sour cream, and cilantro leaves. Pour this mixture over the filling in the prepared crust.
8.Reduce the oven temperature to 350 & deg; F and bake the quiche for 60-70 minutes or until a toothpick inserted in the center comes out clean. Let it cool for 10-15 minutes before slicing and serving.
