Ingredients

3 tablespoons cilantro , minced
2 teaspoons coarse black pepper
8 cloves garlic , minced
1 lb boneless skinless chicken thighs or 1 lb boneless skinless chicken breast , cut into 1 1/2 inch chunks
1/3 cup tomato sauce
1 tablespoon brown sugar , firmly packed
1 tablespoon white vinegar or 1 tablespoon cider vinegar
1/2 cup raisins
Mexican Garlic Chicken Bites are a twist on classic chicken skewers that pack a big flavor punch. The garlic and black pepper add depth while the tomato sauce and raisins add sweetness. Instructions

1.Preheat the oven to 400°F (200°C).
2.In a bowl, mix together cilantro, black pepper, and garlic. Reserve 1 tablespoon of the mixture for later.
3.Add chicken to the bowl and mix well, making sure all the pieces are coated.
4.Thread the chicken onto skewers and place them on a baking sheet lined with parchment paper.
5.In a small saucepan, mix together tomato sauce, brown sugar, vinegar, and raisins over low heat. Cook until the sugar has dissolved and the mixture thickens, about 5 minutes.
6.Brush the chicken with the tomato mixture and sprinkle with the reserved cilantro mixture.
7.Bake for 20 minutes or until the chicken is cooked through and the sauce is caramelized.
