Ingredients

5 cups black beans
1 tablespoon cumin seed
2 poblano chiles
1 jalapeno pepper ( red or green )
1 large green bell pepper
1 large red bell pepper
2 tablespoons Spanish olive oil
1/2 cup Spanish olive oil
1 large white onion
6 garlic cloves
2 teaspoons salt
1 teaspoon fresh ground black pepper
1 chicken bouillon cubes ( or Spanish Sofrito ) or 1 beef bouillon cube ( or Spanish Sofrito )
1/2 cup cilantro leaf
1/2 cup epazote leaves
1 bunch fresh thyme ( small handful )
This Mexican Farmers Market Black Bean Soup is a healthy and flavorful dish that is perfect for warming up on a cold day. Instructions

1.Rinse and drain the black beans.
2.In a heavy saucepan, toast the cumin seeds over medium heat for 2-3 minutes or until fragrant.
3.Remove the cumin seeds from the saucepan and set them aside to cool.
4.Seed and dice the poblano peppers, jalapeno pepper, green bell pepper, and red bell pepper.
5.In a large Dutch oven or soup pot, heat 2 tablespoons of olive oil over medium-high heat.
6.Saute the diced peppers in the olive oil until they are tender.
7.Peel and chop the onion, then add it to the pot with the peppers and cook for an additional 5 minutes.
8.Mince the garlic cloves and add them to the pot with the salt and pepper.
9.Add the black beans, chicken bouillon cube, cilantro, epazote, thyme, cumin seeds, and water to the pot.
10.Bring the soup to a simmer and let it cook for 30 minutes or until the beans are cooked through.
11.Season the soup with additional salt and pepper to taste.
