1/4 teaspoon Mexican chili powder ( optional )

Instructions

1.Preheat the oven to 180°C fan-forced and lightly grease 6 x 10cm tart tins with olive oil.
2.Cut the pastry sheets into 6 x 12cm rounds to line the tart tins. Press pastry into the tins and trim the edges. Place the tins onto a baking tray.
3.In a bowl, mix the corn kernels, grape tomatoes, red capsicum, green shallots, and cheddar cheese. Add the Mexican chili powder if desired. Mix well and spoon into the tarts.
4.In a separate bowl, beat the eggs and add to the tarts evenly.
5.Bake the tarts for 20-30 minutes or until the egg mixture is set and the pastry is golden. Serve immediately.
