2 cups whole wheat flour

Instructions

1.Preheat the oven to 350°F.
2.In a large bowl, whisk together the whole wheat flour, unbleached flour, baking powder, baking soda, kosher salt, baking cocoa, cinnamon, cardamom, nutmeg, and cloves.
3.In another bowl, beat the eggs, buttermilk, canola oil, grated zucchini, and vanilla essence together until well combined.
4.Slowly add the sugar to the wet mixture while continuing to beat.
5.Combine the wet and dry ingredients until just incorporated.
6.Add the chocolate chips to the batter and stir until evenly distributed.
7.Pour the batter into muffin tins, filling each cup about 2/3 full.
8.Bake for 20-25 minutes or until a toothpick inserted in the center of a muffin comes out clean.
9.Remove the muffins from the oven and let them cool for 5 minutes before removing them from the tins to cool completely.
