Ingredients

1 lb Brussels sprout , julienned
2 tablespoons ground up mexican chocolate
1/8 teaspoon paprika
3 green onions , cut into tiny rounds
2 tablespoons olive oil
1 cup walnuts
2 tablespoons honey ( or corn syrup for vegan version )
2 tablespoons flax seeds
salt

Instructions

1.Preheat the oven to 375°F.
2.In a small mixing bowl, mix together ground mexican chocolate, paprika and 1 Tbsp olive oil together.
3.In another mixing bowl, coat the brussels sprout julienne in the mexican chocolate mixture.
4.Spread the brussels sprout julienne mixture onto a baking sheet in a single layer, sprinkle with a pinch of salt and roast for 20 - 25 minutes or until crispy and browned.
5.In a pan, heat 1 Tbsp olive oil over medium-high heat. Add the green onions and cook for 2 - 3 minutes, or until the onions start to soften.
6.In another pan, toast the walnuts over medium heat for about 5 minutes. Add 2 Tbsp honey, flax seeds and a pinch of salt. Stir continuously to coat the walnuts. Cook for another 3-5 minutes until the honey is caramelized and the walnuts are golden brown.
7.Once everything is cooked, plate the roasted brussel sprout julienne and top with the green onions and candied walnuts.
