Ingredients

2 cups chicken , cooked , chopped
1 can cream of chicken soup
1 can cream of mushroom soup
2 cups cheddar cheese , shreeded ( may sub monterey jack or mexican cheese mix )
1 onion , diced
1/2 cup bell pepper , diced ( red bell pepper looks beautiful in this dish , but green is good too )
1 garlic clove , pressed
1/2 cup salsa ( any kind you like , I prefer regular thick n ' chunky )
12 corn tortillas
1 teaspoon chili powder
1/2 teaspoon cayenne pepper
1 tablespoon oil

Instructions

1.Preheat the oven to 350°F.
2.Grease a 9x13 inch baking dish.
3.In a medium-sized mixing bowl, combine the cream of chicken soup, cream of mushroom soup, and salsa.
4.Mix in the chili powder, cayenne pepper, and pressed garlic.
5.Place 4 tortillas on top of the greased baking dish.
6.Spread half the sauce mixture on top of the tortillas.
7.Layer half the chopped chicken, diced onions, and diced bell peppers on top of the sauce.
8.Sprinkle 1 cup of shredded cheese on top of the chicken.
9.Repeat by placing another layer of tortillas on top of the cheese.
10.Spread the remaining sauce mixture onto the tortillas and layer the remaining chicken, onions, and bell peppers on top.
11.Sprinkle the remaining 1 cup of cheese on top of the bell peppers.
12.Bake in the preheated oven for 25-30 minutes or until the cheese is melted and bubbly on top.
