Ingredients

2 boneless skinless chicken breasts , cut in 1 inch cubes
1/4 cup flour ( or enough to dredge )
1/2 tablespoon paprika
1/4 tablespoon salt
1/4 tablespoon black pepper
1 tablespoon olive oil
1 small green bell pepper , diced
1 garlic clove , minced
1 can diced tomatoes with juice
1/2 cup white rice
1/4 teaspoon dried chipotle powder ( can add more if desired )
1/4 teaspoon dried oregano
1/4 teaspoon cumin
1/4 teaspoon coriander
1/2 - 1 cup chicken stock
Mexican Chicken and Rice (One Pot) is a warm and comforting dish that is perfect for busy weeknights or lazy weekends. Instructions

1.Dredge the chicken pieces in flour mixed with paprika, salt, and pepper.
2.Heat olive oil in a large skillet or Dutch oven. Cook the chicken pieces for 5-6 minutes or until no longer pink. Remove from the pan and set aside.
3.In the same pan, cook the diced green bell pepper and minced garlic until soft.
4.Add can of diced tomatoes, white rice, chipotle powder, oregano, cumin, coriander, and chicken stock to the pan. Bring to a boil.
5.Return the chicken to the pan and stir. Reduce heat to low and cover. Cook for 15-20 minutes or until rice is tender and the liquid has been absorbed.
6.Serve hot and enjoy!
