Ingredients

1 1 lb sea bass fillets ( or use a mixture of fish and shrimp ) or 1 lb red snapper fillet ( or use a mixture of fish and shrimp )
5 -6 limes ( Enough Juice to cover fish )
1 cup diced fresh tomato
1 green pepper , sweet , chopped
4 tablespoons chopped parsley or 4 tablespoons chopped cilantro
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon oregano
2 jalapeno peppers , chopped ( or more to suit your taste )
2 tablespoons white vinegar
1 medium onion , finely chopped
2 tablespoons fresh cilantro , chopped
1 dash Tabasco sauce
lettuce leaf ( to line serving bowls )
avocado ( optional )
black olives , sliced ( for garnish ) ( optional )
Ceviche is a popular dish in Central and South America, originally from Peru. It is typically made with raw fish and marinated in citrus juices, like lime or lemon, with various herbs and spices. Mexican Ceviche, one of the variations of Ceviche, typically includes raw seafood like fish and shrimp marinated in lime juice, onion, tomato, peppers, and spices. Instructions

1.Cut the fish fillets into small chunks.
2.In a non-reactive dish, pour the lime juice over the fish and mix well to ensure it’s all coated in juice.
3.Cover the dish with cling film and leave to marinate in the fridge for 30 minutes.
4.After 30 minutes, drain any excess liquid and rinse the fish under cold running water and drain well.
5.In a bowl, mix together diced tomatoes, chopped green pepper, chopped cilantro/parsley, and chopped onions.
6.Add the fish chunks to the bowl with the diced vegetables and mix gently.
7.Add salt, pepper, oregano, jalapeno peppers, Tabasco sauce, and white vinegar and mix well.
8.Cover the bowl with plastic wrap and let it chill in the fridge for at least 1 hour.
9.Serve chilled on lettuce leaves, garnished with sliced black olives and diced avocado (optional).
