Ingredients

2 chipotle chiles in adobo , diced
1 tablespoon adobo sauce ( from can )
1 garlic clove , grated
1/4 cup Mexican crema ( can substitute creme fraiche or sour cream )
1/4 cup mayonnaise
1/2 cup lightly mashed avocado , preferably Hass ( about 3/4 of an avocado )
1 tablespoon lime juice
kosher salt
3/4 lb ground chuck
1 chipotle chile in adobo , minced
1 tablespoon adobo sauce ( from can )
1/2 teaspoon kosher salt ( to taste )
1/8 teaspoon fresh ground black pepper
canola oil , for pan frying
3 ounces mozzarella cheese , separated into thin strings ( can substitute Oaxacan cheese or quesillo )
2 hamburger buns with sesame seeds , toasted
1/4 cup fresh cilantro and 2 tablespoons watercress leaf , minced
1 cup corn tortilla chips , lightly crushed
2 slices red onions , very thin
Cemita is a type of sesame seed bun popular in Puebla, Mexico, and in this recipe we use it as a burger bun to make a delicious, unique burger. The burger patty is seasoned with chipotle chile and adobo sauce, giving it a smoky and spicy flavor. Instructions

1.In a bowl, mix together the diced chipotle chiles, adobo sauce, grated garlic, Mexican crema, mayonnaise, mashed avocado, lime juice, and salt to taste. Set aside.
2.In another bowl, mix together the ground chuck, minced chipotle chile, adobo sauce, salt, and black pepper. Form the mixture into two patties.
3.Heat a pan over medium-high heat with just enough canola oil to coat the bottom. Cook the patties for 3-4 minutes on one side, then flip and cook for another 2-3 minutes. Top each patty with half the mozzarella strings and cover the pan for 1 minute or until the cheese is melted.
4.Toast the hamburger buns and spread the reserved chipotle mayonnaise mixture on both sides of the buns.
5.Place a patty on each bun, then add the minced cilantro and watercress, crushed tortilla chips, and sliced red onions. Serve and enjoy!
