1/2 anaheim chili , roasted peeled and seeded
1/3 cup pepitas , roasted ( pumpkin seeds )
2 garlic cloves , peeled
1/4 teaspoon pepper
1 teaspoon salt
12 ounces oil
1/4 cup red wine vinegar
5 tablespoons Cotija cheese , grated
1 bunch cilantro , stems removed
1 1/2 cups mayonnaise
1/4 cup water
2 corn tortillas
2 tablespoons oil
1 head romaine lettuce , rinsed
1/3 cup Cotija cheese , grated
1/2 cup pepitas
The Mexican Caesar Salad is a twist on the classic Caesar Salad, but it's loaded with bold Mexican flavors. Instructions

1.Preheat your oven to 375F/190C.
2.In a blender or food processor, pulse together the roasted Anaheim chili, roasted pepitas, garlic, pepper, salt until a paste forms.
3.Stream in the oil and red wine vinegar while pulsing the blender until smooth.
4.Add the grated Cotija cheese and cilantro, pulsing the blender until combined.
5.In a small bowl, whisk together the mayonnaise and water until smooth.
6.Cut the tortillas into thin strips and toss them with 2 tablespoons of oil in a large bowl until they're coated.
7.Spread the tortilla strips in a single layer on a baking sheet and bake until crisp, around 10-12 minutes.
8.Toss the torn romaine lettuce, Cotija cheese, pepitas, and dressing with the remaining tortilla strips until everything is coated in the dressing. Serve immediately.
