Mexican Cajeta - Caramel Crepes are a sweet and indulgent dessert originating from Mexico. Cajeta is a traditional Mexican caramel made from sweetened goat milk and is used as a filling for the crepes. The toasted coconut adds a nutty flavor and crunchy texture to the dish. The crepes are served with coffee ice cream, which provides a contrast to the sweet and rich flavors of the cajeta and coconut. This dessert is perfect for serving at dinner parties or as a special treat for your family.

Instructions

1.In a small saucepan, warm the cajeta (Mexican caramel) over medium heat until runny. Stir in the rum and mix well.
2.Lay out a tortilla and spoon 1/4 cup of the cajeta mixture onto the center of the tortilla. Sprinkle 1/3 cup of the toasted coconut over the cajeta.
3.Roll up the tortilla tightly and place it seam-side down on a plate. Repeat with the remaining tortillas and cajeta mixture.
4.Place the plates in the refrigerator for 20-30 minutes to set.
5.Serve each crepe with a scoop of coffee ice cream and top with additional cajeta and toasted coconut, if desired.
