8 eggs

Instructions

1.Preheat oven to 375 degrees F (190 degrees C) or set slow cooker to low heat.

5.Top with remaining tortillas, then pour remaining egg mixture on top. Sprinkle the remaining 1 cup of cheese on top.
6.If using a baking dish, bake for 25-30 minutes, or until eggs are set and top is golden brown. If using a slow cooker, cover and cook on low for 6-8 hours or until eggs are set.
7.Serve hot with optional toppings such as salsa, sour cream, and pickled jalapeno pepper.
