1 red capsicum , seeded and chopped
1 potato , peeled and chopped
1 onion , chopped
2 tomatoes , chopped
420 g mexican style beans , drained
1 cup tasty cheese , grated
4 sheets frozen puff pastry , thawed
milk , for glazing
2 tablespoons sesame seeds

Instructions

1.Preheat the oven to 200°C (180°C fan-forced).
2.In a frying pan, heat the olive oil and add the capsicum, potato, and onion.
3.Cook until the vegetables are soft and then add the chopped tomatoes and mexican-style beans.
4.Let the mixture cook for 5-6 minutes and then turn off the heat.
5.Cut the puff pastry into 4 equal squares and spoon the bean mixture into each square.
6.Sprinkle grated cheese on top of the mixture and fold the pastry over the top.
7.Press the sides together with a fork and brush with milk.
8.Sprinkle sesame seeds on top of the pastries and bake for 20-25 minutes, or until pastry is golden brown and cooked through.
