Ingredients

4 ounces shell macaroni
2 eggs , beaten in separate bowls
1/3 cup grated parmesan cheese
1 tablespoon margarine or 1 tablespoon butter , cut up
1 cup cottage cheese , drained
1/2 lb ground beef
1 medium onion , chopped ( about 1/2 cup )
8 ounces tomato sauce
8 ounces red kidney beans
4 ounces diced green chili peppers
1 teaspoon chili powder
1/2 cup monterey jack cheese , shredded
chopped tomato and lettuce
Mexicali Macaroni Pie is a twist on a classic comfort food, macaroni and cheese. This version is filled with seasoned ground beef, kidney beans, and chili peppers to give it a Tex-Mex flare. Topped with melty cheese and baked to perfection, this dish is filling and satisfying. Perfect for a weeknight dinner or a potluck. Serve with chopped tomatoes and lettuce to add some freshness and crunch to the dish.

Instructions

1.Preheat oven to 350 degrees Fahrenheit. Cook macaroni shells in boiling water until cooked al dente. Drain and set aside.
2.In a large bowl, beat one of the eggs. Add in parmesan cheese, margarine/butter, and cottage cheese. Mix well.
3.In a large skillet, brown ground beef and onion together until meat is no longer pink. Add in tomato sauce, red kidney beans, chili peppers, and chili powder. Simmer for 10 minutes.
4.In a small bowl, beat the other egg. Set aside.
5.Grease a pie plate and layer the ingredients in this order: half of the cooked macaroni shells, all of the cottage cheese mixture, all of the meat mixture, all of the shredded cheese, the remaining macaroni shells, and finally, the beaten egg.
6.Bake for 45 minutes or until golden brown on top. Let stand for 5-10 minutes before slicing. Serve with chopped tomato and lettuce.
