Ingredients

1 package frozen chopped spinach , thawed ( hand-squeeze out any moisture )
3 -4 tablespoons butter
1 large onion , chopped
2 tablespoons fresh minced garlic ( or to taste )
3 green onions , chopped
1 red bell pepper , seeded and finely chopped
2 large jalapeno peppers , seeded and finely chopped
1 teaspoon dried chili pepper flakes ( add in for more heat ! ) ( optional )
1 can cream of chicken soup , undiluted
3 -4 teaspoons cumin ( or to taste )
salt and pepper
1 package nacho cheese flavored tortilla chips , divided
6 cups cooked chicken , chopped and divided
2 -4 cups shredded four-cheese Mexican blend cheese , diided ( or to taste )

Instructions

1.Preheat the oven to 350°F.
2.In a large skillet, melt butter over medium heat and sauté onion, garlic, green onions, red bell pepper, jalapeno pepper, and dried chili pepper flakes for 5-10 minutes or until vegetables are softened.
3.Add cream of chicken soup and cumin, and mix well. Season with salt and pepper to taste.
4.In a 9x13 inch baking dish, spread a layer of tortilla chips, followed by a layer of the vegetable mixture, a layer of chopped chicken, and a layer of shredded cheese.
5.Repeat the layers until all ingredients are used up, finishing with a layer of cheese on top.
6.Bake in the oven for 20-30 minutes or until cheese is melted and bubbly. Let cool for a few minutes before serving.
