Instructions

1.Preheat the oven to 350°F (175°C).
2.In a large bowl, combine the crushed tortilla chips, chicken, kidney beans, tomato sauce, hot salsa, onion, bell pepper, cilantro, minced garlic, and fresh ground pepper. Mix well.
3.Spread half of the mixture into a greased 9 x 13 inch baking dish. Sprinkle half of the shredded cheese over the top and add half of the diced tomatoes.
4.Repeat the layers with the remaining mixture, cheese, and tomatoes.
5.Cover the baking dish with aluminum foil and bake for 30 minutes.
6.Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and the casserole is heated through.
7.Remove from the oven and let cool for a few minutes. Spoon the sour cream on top of the casserole, sprinkle with additional cilantro, and serve.
