Ingredients

2 tablespoons ghee or 2 tablespoons oil
1 pinch asafoetida powder
1/2 teaspoon mustard seeds
1 teaspoon cumin seed
3 teaspoons kasuri methi ( dried fenugreek leaves )
salt
1/4 teaspoon black pepper
1 kg baby potatoes , washed and dried
3 tomatoes , washed , peeled and chopped
3 onions , peeled , washed and chopped
2 cloves garlic , peeled , washed and chopped
1 inch fresh ginger , peeled , washed and chopped
2 green chilies , washed , ends trimmed and chopped
3 teaspoons red kashmiri chilies
1 tablespoon coriander seed
Methi Dum Aloo is a traditional Indian dish that originates from the northern part of India. The dish is made with boiled baby potatoes, cooked in a spicy and flavorful gravy of tomatoes, onions, garlic, and ginger, and flavored with dried fenugreek leaves or kasuri methi. Instructions

1.Boil the baby potatoes in salted water until they're cooked.
2.Peel them, keeping them whole, and keep them aside.
3.In a pan, heat ghee or oil, add asafoetida, mustard seeds, and cumin seeds, and let them splutter.
4.Add kasuri methi, salt, and black pepper.
5.Add chopped onions, garlic, ginger, and green chilies. Stir well.
6.Add chopped tomatoes and stir until they're mushy and cooked.
7.Add red Kashmiri chilies, coriander powder, and stir for another 2-3 minutes.
8.Add boiled potatoes and mix well. Let it cook for another 5-7 minutes.
9.Garnish with fresh coriander leaves and serve hot with roti, paratha, or rice.
