Ingredients

8 meaty beef short ribs
salt & pepper
1 cup merlot ( I use wine from BC vineyards )
2 1/2 cups beef stock
1/4 cup flour
1 tablespoon brown sugar
2 tablespoons Dijon mustard
1 medium onion , halved and thinly sliced
2 garlic cloves , thinly sliced
4 -5 sprigs fresh thyme
Merlot Braised Beef Short Ribs is a classic winter weather comfort food. This dish is warm, hearty, and satisfying with tender meat that falls off the bone. Instructions

1.Preheat the oven to 350 degrees F.
2.Season the beef short ribs with salt and pepper, and dredge them in the flour to coat.
3.Heat some oil in a Dutch oven over medium-high heat, and brown the beef short ribs on all sides.
4.Remove the beef short ribs from the Dutch oven, and set them aside.
5.Add the onions and garlic to the Dutch oven, and cook until softened.
6.Add the merlot, brown sugar, Dijon mustard, and beef stock to the Dutch oven, and bring to a simmer.
7.Add the beef short ribs back into the Dutch oven along with the fresh thyme sprigs.
8.Cover the Dutch oven, and place it in the oven for 2 1/2-3 hours, until the beef short ribs are tender and falling off the bone.
9.Remove the beef short ribs from the Dutch oven, and set them aside to rest.
10.Skim the fat off the top of the braising liquid, and reduce the liquid over high heat until thickened.
11.Serve the beef short ribs with the reduced braising liquid.
