1 veal knuckle
6 cups water

1/4 teaspoon crushed red pepper flakes
1/4 teaspoon pepper
1 can hominy
dried chile pequins or crushed red pepper flakes
lime wedge

Instructions

3.Skim the foam off the top of the pot when necessary. Add coriander seed, oregano, red pepper flakes, and pepper.
4.Cook the soup until the meat is tender. Add hominy and cook for another 15-20 minutes.
5.Garnish with limes and crushed red pepper flakes, if desired.
