Ingredients

3 gallons water , divided
2 1/2 pounds beef tripe , cut into 1-inch pieces
6 cloves garlic , finely chopped
1 large white onion , finely chopped
1 1/2 tablespoons salt
1 tablespoon ground black pepper
1 1/2 tablespoons dried oregano
2 tablespoons ground red pepper
5 de arbol chile peppers
6 japones chile peppers , seeds removed
6 cups canned white or yellow hominy , drained
1/2 white onion , chopped
1/4 cup chopped fresh cilantro
2 limes , juiced
Menudo Rojo is a popular dish in many Mexican households, served on special occasions and family gatherings like Christmas and New Year's Eve. The dish consists of beef tripe and hominy cooked with a spicy red chili sauce made from de arbol and japones chile peppers. Instructions

1.Rinse the beef tripe under cold water and place it in a large pot with 2 gallons of water, garlic, and onion. Add salt, black pepper, oregano, ground red pepper, and mix well.
2.Boil the mixture over medium heat for about 2 hours until the tripe becomes tender.
3.In another pot, boil 1 gallon of water with the de arbol and japones chile peppers for about 10 minutes. Remove them from the heat and let them cool.
4.Once the chile peppers are cool, blend them in a food processor until they form a smooth and thick paste.
5.Add the chile paste and hominy to the pot with the beef tripe, and cook for an additional 30 minutes.
6.Remove the pot from the heat and let it cool for 5 minutes. Garnish with white onion, cilantro, and lime juice before serving.
