900 g cooking apples
50 g sugar
1 tablespoon apricot jam
1 tablespoon lemon juice
3 tablespoons orange juice
200 g soy margarine
200 g caster sugar
225 g ground almonds
4 eggs
1 lemon , zest of , grated
Menorah Apple Pudding is a delicious and fruity dessert that is perfect for the colder months. Instructions

1.Preheat your oven to 180C / 160C fan / gas mark 4.
2.Peel, core, and slice the apples, then mix them in a bowl with the sugar, apricot jam, lemon juice, and orange juice.
3.Heat a large frying pan over medium-high heat and melt the soy margarine.
4.Add the almond flour, lemon zest, eggs, and apple mixture to the pan, and stir well until everything is mixed together.
5.Pour the mixture into a greased baking dish, and bake in the oven for around 50 minutes, or until the pudding is golden brown and a skewer inserted into the centre comes out clean.
