Ingredients

2 1/2 - 3 lbs pigs tail , tail end removed
3 -4 lbs meaty spareribs
1 1/2 teaspoons salt
1/3 teaspoon fresh ground pepper
1 1/2 teaspoons paprika
1 1/2 teaspoons dry mustard
1 1/2 1 1/2 tablespoons honey or 1 1/2 tablespoons molasses
1 1/2 tablespoons Worcestershire sauce
3/4 cup ketchup or 3/4 cup chili sauce
3/4 cup water
1/3 cup cider vinegar
2/3 cup very finely minced onion
2 cloves garlic , minced

Instructions

1.Preheat oven to 375°F.
2.Mix together salt, pepper, paprika and dry mustard, and rub over the spareribs, front and back.
3.Put ribs in a roasting pan and cover with foil.
4.Roast for 1 hour, covered.
5.Remove the foil, cut ribs into serving pieces and arrange in a baking dish.
6.Combine honey, Worcestershire sauce, ketchup or chili sauce, water, cider vinegar, onion and garlic in a saucepan and cook over low heat for 15 minutes.
7.Pour sauce over ribs and bake for an additional 1 1/2 hours, basting with sauce occasionally.
